Puerto Vallarto golf course a Nicklaus signature course, also has 19 holes. Tough one to find but I found it.

Four Seasons Golf Course at Punta Mita is also one that has 19 holes. The 7,104-yard, par-72 course features eight ocean-side holes and an optional “19th” par-3 hole with a natural island green.
